Happy St. Patrick's Day 2011

Remember where we were a year ago?  Wow...

Happy St. Patrick's Day!!!  All's well in this (mostly) Irish (as I tell Peter) household, with the kids dressed in their green finery and me already having baked a fresh loaf of soda bread.  A pie is in the oven for dessert and, shortly, I'll get my corned beef and cabbage (with potatoes and carrots) in the crock pot. (Did you know that corned beef & cabbage is actually an Irish-American tradition???  It is!)  Tonight, Sarah and I are going to the local pub for a 1 mile race with a Guinness pint at the end!  And, for lunch today, Peter and I are visiting that same pub for an "alone time" lunch.  My MIL is visiting to watch the kids while we do our dental appointments and annual eye exams, and we are taking the time to sneak in a lunch date.  Yay!

But, without further ado... Here's a Happy St. Pat's Greeting from my monkeys to you!! :)

And, in honor of my Irishness (and hey, it's St. Pat's so EVERYONE is Irish today, here's my soda bread recipe, weighing in at 200 calories a pop (without butter; the recipe makes 10 servings).


Irish Soda Bread

Turn your oven to 375 degrees.

Stir together:
1 2/3c all purpose flour
2tbsp sugar
1tsp baking powder
1/2tsp baking soda
1/2tsp salt

Then add:
1 cup dried currants

In a measuring cup, mix together
2/3 cup buttermilk
1/4 cup melted butter
1 large egg

Add your wet ingredients to your dry ingredients, stirring until combined.  Make a bread ball and place it on a well greased baking sheet.  Cut a cross in the top of the bread.  Bake for 40 minutes, or until done.  Serve with Irish (or my favorite- Icelandic!) butter.

Oh, they look wonderful in their 'greens'!

It's funny - I just spent a half hour online looking for a soda bread recipe. We're going the corned beef (with guinness!) route to please my carnivorous husband, but the soda bread is a must for ME!

Happy St. Pat's. Those babies are getting so big. And of course they are beautiful! I have everything except the currants for the soda bread recipe at home. Guess one Hubby will be hitting the store for me tonight!

You can use raisins if you dont have currants, I just like the currants better.
